I've had a druid with 12 summons active at once. The undead spells require a body though, Zombies make more zombies, They just die out of combat. I havn't found an upper limit myself yet outside of running out of bodies to summon more undead. I think you can do a minion master build if you wanted. Once you get level 4 spell lots you can animate 4 and so on, you just need the corpses. Zombies can animate temporary zombies if they get the killing blow. Iv gotten 9 zombies running around in a fight once. Also, citizens don’t take kindly to your summons ...
